2 lb plum tomatoes, peeled, seeded and c, oarsely chopp
1 cup coarse chopped basil leaves
3 tbsp sherry vinegar
3 1/4 oz jar capers, drained / rinsed
1 salt and pepper to taste
1 lb capellini or angel hair pasta
3/4 cup olive oil (pref xtra-virgin)
Directions
Combine tomatoes and basil. Marinate at room temperature 1 to 2
hours or overnight in refrigerator. Blend vinegar, capers, salt and
pepper into tomato mixture. Bring large amount of salted water to
rapid boil. Add pasta and cook until just tender but still firm to
bite; drain well. Transfer to platter. Add enough oil to coat. Mix
in tomato sauce. Let stand 5 minutes before serving.

The History of Recipes
Written recipes as a concept can be found back into distant history, in truth as far into history as the Egypt of the Pharoahs, and possibly even further than that. However, mostly, these old records were just simple hieroglyphic recipes for preparing meals.
In an interesting twist, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a series of clay tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. Moving our culinary historical trip onwards, there are two interesting recipe books published in the 14th Century : one book called `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, these two books have no connection with the spicy food that is familiar to us all today, but rather accounts of the types of meals prepared by the chefs of the rich and wealthy people of that time. Over the succeeding few centuries, the wealthy families of Europe tried to serve up the most extravagent banquests, and because of this cooks and their collection of recipes were greatly in demand. Nevertheless, it was during the 19th century the formal cooking and recipe collections really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to assembling, trying out, and recording recipes common in their social group. The arrival of TV brought us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to search through thousands of recipes like those on our site. |
