The History of Recipes
We are able to track the history of meal recipes way back into antiquity, at least as far back into history as the Egypt of the Pharoahs, and possibly even further. In practice though, these, ancient cookbooks were just very simple pictorial recipes for meal preparation.
The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, is a collection of tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. As we move on, there were some recipe books published in the 1300s - a recipe book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these books have no connection with the indian curry that is popular today, but rather recipes for the types of food on the menus of the upper classes. Later, in the fifteenth century, people returning from the crusades brought us many foods and spices from Arab countries, such as coriander, basil and rosemary. The introduction of these new tastes created an explosion in recipe books, many of which still exist in private libraries. During the following few hundred years, the rich and powerful families of Wesstern Europe competed with each other to offer the most extravagent banquests, and as a consequence, cooks and their recipes were highly sought after. However, it wasn`t until the 19th century that cookery and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to assembling, testing, and recording recipes for their fellow cooks to enjoy. The arrival of television brings us TV cookery programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everyone to search through thousands of recipes just like those on this site. |
