The History of Recipes
Experts have found proof that recipes existed back into history, at least as far as early Egypt, and potentially, even further back. Having said that, mostly, these old cook books were just very simple hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the oldest recipe discovered, according to historians are some ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. Later on, in The time of the romans 25BC a man called Apicius compiled a few scripts detailing recipes cooked by wealthy roman citizens. In his publication, he recounts how the roman meals were divided into hors d`oeuvres, main meal and afters, a very modern way of dining. He also tells us how the ancient Romans were skilled in the use of many different herbs, including a few that will be familiar to modern cooks for example thyme, fennel and parsley. Later on, in the 15th century, the Crusaders brought back many foods and spices from the holy lands, including spices like parsley, basil and rosemary. These new spices and herbs caused an eruption in manuscripts on cookery, the majority of which still exist in private cookery archives. Over the succeeding few centuries, the wealthy families of Wesstern Europe competed to offer the most extravagent banquests, and consequentially the best chefs and their collection of recipes were much in demand. Even so, it wasn`t until the 19th century that cooking and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, verifying, and publishing the recipes of their peers. When we get to the 20th century, recipe publications are in great demand, as a result of better eduction, people having increased spare time and having more money. The TV revolution brought us TV cookery programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like those on the site you are now reading. |
