The History of Recipes
It is quite possible to prove the history of written cooking instructions way back into history, at least as far back into history as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, in the main part, these old records were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
As we move into The time of the romans 25BC a roman called Apicius compiled a number of documents detailing recipes enjoyed by wealthy Romans. In his publication, he tells us how the meals were split into hors d`oeuvres, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the Roman cooks used a wide range of spices, including some familiar names such as thyme, fennel and dill. During the next few hundred years, the rich and powerful families of Wesstern Europe competed to serve the best banquets, and as a consequence, chefs and their collection of recipes were at a premium. Nevertheless, it wasn`t until the 1800s the formal cooking and recipe publications really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. By the time we get to the twentieth century, cookery books were highly popular due to more people being able to read, leisure time and having more disposable income. |
