The History of Recipes
We can track the history of meal recipes back into history, at least as far into history as the Egyptians, and possibly even further than that. Interesting though that is, generally, these early records were just primitive hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe discovered, according to Professor Solomon Katz, are some ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. Later, there are two recipe books from the 14th Century - one book titled `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, they are not about the indian food that is popular today, but rather accounts of the types of meals served to the wealthy. For the centuries that followed, the wealthy families of Wesstern Europe competed to offer the best banquets, and consequentially cooks and their recipes were greatly in demand. However, it was during the nineteenth century that haute cuisine and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to assembling, testing, and writing down recipes for their fellow cooks to enjoy. By the time we get to the 20th century, recipe publications are in great demand, due to better eduction, more free time and being a little richer. |
