The History of Recipes
We can read the history of written recipes far back into history, certainly as far back as the Egypt of the Pharoahs, and possibly even further. Having said that, sadly, these ancient recipes were just very simple hieroglyphic recipes for preparing food.
In fact, the oldest recipe discovered so far, according to food historians is a collection of ancient tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. Later on, in Roman times around 25BC a roman called Apicius wrote a number of documents describing recipes cooked by wealthy Romans. In his publication, he recounts how the roman meals were divided into hors d`oeuvres, main meal and desserts, something we still use today. This early Roman chef tells us how the cooks of his times were skilled in the use of many different aromatic flavours, including a few that are still present in modern kitchens such as bay, mint and dill. Later on in the 1400s, people returning from the crusades brought back many foods and spices from Arab cuisine, such as coriander, basil and rosemary. These new spices and herbs created an explosion in cookery books, most of which are kept safe in academic collections. By the advent of the twentieth century, cook books were in high demand, as a result of higher levels of literacy, more free time and having more money to spend. The introduction of the TV gave us cooking programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everyone to access massive numbers of recipes like those on our site. |
