12 oz mozzarella, fresh buffalo- milk, i, n very thin slices
12 basil leaves, fresh
1 lb tomatoes, fresh, ripe
1 cup extra virgin olive oil
1 coarse salt
1 freshly ground black pepper
Directions
Rinse, core and cut tomatoes into thin slices. In four medium-size
salad dishes, alternate the cheese slices, basil and tomato slices,
overlapping slightly. Divide the olives evenly and arrange them at
the centre of each dish. Spoon the oil over each serving, letting it
to form a pool like a sauce. Season with salt and pepper, cover and
let stand at room temperature for at least 30 minutes before servingb.

The History of Recipes
We can track the history of `recipes` far back into distant history, at least as far back into history as the Egyptians, and possibly even further than that. However, in the main part, these ancient cookbooks were just very simple hieroglyphic instructions for preparing meals.
In fact, the oldest recipe discovered so far, according to academics are some tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Later on, in Roman times around 25BC a roman called Apicius wrote a collection of documents describing recipes prepared by the Romans. He describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Aspicius tells us how the Romans used many aromatic flavors, including some familiar names like thyme, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought back many foods, spices and herbs from middle-east cuisine, such as rosemary and coriander. These new herbs and spices caused an eruption in manuscripts on cookery, many of which still exist in private libraries. By the advent of the twentieth century, cookbooks are in great demand, due to higher levels of literacy, people having more free time and having more disposable income. The introduction of the TV gave us TV cookery programs and the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
