The History of Recipes
Academics have traced the existance of recipes way back into the far past, certainly as far back as the Egypt of the Pharoahs, and maybe further still. In practice though, mostly, these old cook books were just basic hieroglyphic recipes for food preparation.
As we move into The time of the roman empire around 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes cooked by the Romans. In his scrolls, he recounts how the meals were divided into appetizers, main meal and dessert, a very modern way of dining. This early Roman chef tells us how the ancient chefs made use of many different herbs, including some familiar names such as basil, rue and parsley. Over the next few hundred years, the rich and powerful families of Europe strove to offer the most exotic banquets, and as a consequence, chefs and their recipes were much in demand. However, it was during the 19th century that haute cuisine and recipe books really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, verifying, and writing down recipes for their fellow cooks to enjoy. The arrival of TV brings us TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting us all to search through massive numbers of recipes like those on the site you are now reading. |
