The History of Recipes
We can track the history of `recipes` back into the distant past, certainly as far as the ancient Egyptians, and maybe further still. Having said that, sadly, these old records were just very simple pictorial recipes for food preparation.
In an interesting twist, the most ancient recipe found, according to experts in ancient history is a series of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. During the time of the Romans a roman called Apicius created a number of documents showing how to cook the recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the roman meals were divided into appetizers, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the Romans made use of a good variety of herbs and spices, including a few that will be familiar to modern cooks like bay, fennel and asafoetida. Over the succeeding few centuries, the families of Europe strove to serve up the best banquets, and as a result chefs and their recipe collections increased in prestige. Even so, it was during the 19th century that fine cooking and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, verifying, and publishing recipes to help cooks of their time. When we get to the 20th century, cookbooks were greatly in demand due to increased literacy, increased leisure time and a general increase in wealth. |
