The History of Recipes
It is quite possible to track the history of transcribed cooking instructions back into distant history, certainly as far back as pharonic Egypt, and potentially, even further back. Interesting though that maybe, these, old records were just simple hieroglyphic or cunieform instructions for preparing food.
As we move into Roman times around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes cooked by wealthy Romans. In his works, Apicius tells us how the roman meals were separated into hors d`oeuvres, main meal and desserts, a very modern way of dining. This early Roman chef describes how the ancient Romans used a wide range of aromatic flavors, including a few that will be familiar to modern chefs such as thyme, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many foods and herbs from Arab cooking, including spices like coriander, parsley, basil and rosemary. The introduction of these new herbs and spices caused an explosion in books on cooking, the majority of which are kept safe in private collections. By the advent of the 1900s, recipe books were in high demand, mostly as a result of more people being able to read, people having increased spare time and a general increase in wealth. |
