The History of Recipes
It is possible to follow the history of `recipes` way back into ancient history, at least as far back into history as ancient Egypt, and potentially, even further back. Having said that, generally, these old records were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe found, according to historians are a few tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. As we move into The time of the romans around 25BC a man called Apicius assembled some documents detailing recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the Roman cooks were skilled in the use of a wide range of herbs and spices, including a few that are still present in modern kitchens such as basil, fennel and parsley. As we move on, there are two recipe books dating from the fourteenth century : one book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, they are not about the spicy food that is served today, but instead accounts of the types of meals on the tables of the rich people of that period. Later, in the fifteenth century, the Crusaders brought back a variety of foods, spices and herbs from the East, including spices like coriander, parsley, basil and rosemary. The introduction of these new culinary ideas was responsible for a torrent in books on cooking, the majority of which are kept safe in private cookery archives. During the next few centuries, the powerful families of Europe competed to serve up the most exotic banquets, and as a result the best chefs and their collection of recipes were much in demand. However, it was during the nineteenth century that fine cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to assembling, verifying, and recording the recipes that were being prepared for the better households. By the advent of the 20th century, recipe publications were highly popular due to increased literacy, people having increased spare time and having more money. The revolution that is television brought us TV cooks and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes just like those on our web site. |
