The History of Recipes
Historians have found proof that recipes existed way back into the far past, at least as far back into recorded history as early Egypt, and potentially, even further back. Having said that, these, early records were just basic hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe in existence, according to experts are a few clay tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Later on, in Roman times 25BC a roman called Apicius assembled a collection of scripts describing recipes prepared by the Romans. He tells us how the roman meals were divided into starters, main meal and desserts, a style of dining still practiced today. He also recounts how the early Romans used many different herbs and spices, including a few that will be familiar to modern chefs for example basil, fennel and parsley. In the fifteenth century, knights returning from the crusades brought back many foods and herbs from Arab countries, including spices like rosemary and coriander. These new culinary innovations was responsible for an eruption in books on cooking, many of which are kept safe in private cookery archives. During the succeeding few hundred years, the upper-class families of Wesstern Europe competed with each other to offer the most extravagent meals, and as a consequence, the best chefs and their recipe collections became highly prized. Notwithstanding that, it was during the 19th century that fine cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collating, verifying, and publishing recipes common in their social group. Like it or not, the introduction of television brings us TV cookery programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to search through thousands of recipes like those on our site. |
