The History of Recipes
We can follow the history of written recipes far back into the distant past, certainly as far into history as ancient Egypt, and potentially, even further back. Interesting though that is, generally, these ancient cook books were just basic hieroglyphic instructions for meal preparation.
Later on, in The time of the romans around 25BC a roman called Apicius created a few scripts describing recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvre, entrees and dessert, something we still use today. Aspicius also tells us how the cooks of his times used a good variety of aromatic flavors, including a few that are still present in modern kitchens like bay, rue and asafoetida. Later on in the 1400s, people returning from the crusades brought us many foods and herbs from Arab countries, including spices like coriander, basil and rosemary. The introduction of these new culinary ideas caused an outbreak in recipe manuscripts, many of which are kept safe in private cookery archives. By the time we get to the 20th century, cookbooks were in high demand, mostly as a result of more people being able to read, people having increased leisure time and having more disposable income. |
