Carrot Bundle Fish Recipe

Ingredients

4 medium carrots in strips
1 cup italian bread crumbs
1/3 cup butter or margarine, melted
1/2 tsp salt
1/4 tsp pepper
2 tbsp lemon juice
1 lb sole or orange roughy


Directions

Heat Oven 375F. Add carrots and enough water to cover in saucepan.
Bring to full boil & cook over med. heat until carrots are crispy
tender (6-8min). Meanwhile, in sml bowl combine all ingrediants
except fish; set aside.

When carrots are done, seperate fish fillets & divide carrots equally
among fillets. Wrap each fillets around each portion of carrots.
Place fillets, seam down, in 9" sq. baking pan (slightly sprayed
w/grease). Sprinkle fish bundles with stuffing mixture. Cover and
bake for 10 minutes. Uncover; continue baking for 8-10 more minutes
or until fish flakes with fork.

The History of Recipes

We can track the history of written recipes way back into ancient history, certainly as far as early Egypt, and potentially, even further back. Interesting though that is, mostly, these old records were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.

Progressing into Roman times around 25BC a man called Apicius created a collection of scripts detailing recipes prepared by wealthy Romans. In his works, he recounts how the meals were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the Roman cooks used many different aromatic flavours, including some that we all recognise like thyme, rue and asafoetida.

Later on in the 1400s, knights returning from the crusades brought us a variety of foods and herbs from middle-east cuisine, including spices like coriander, parsley, and rosemary. These new foods and tastes led to an outbreak in recipe manuscripts, the majority of which are kept safe in private libraries.

When we get to the 1900s, recipe publications are starting to become popular as a result of more people being able to read, people having more spare time and a general increase in wealth.

The introduction of television gave us TV cooks and the spin-off recipe books.

Which brings us neatly to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes just like those on the site you are now reading.
