1 1/2 cup whole wheat flour
1 tsp baking soda
1 tbsp baking powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 egg
2 tbsp vegetable oil
1/4 cup raisins
1/4 cup chopped walnuts
1/3 cup lowfat milk
8 oz can uns. crushed pineapple
1 1/2 cup grated carrots
Directions
Combine the dry ingredients in a bowl. Add the remaining ingredients
and stir to blend. Spoon into oiled muffin tins or paper muffin
cups. Bake at 350 F for 20 to 25 minutes.

The History of Recipes
Academics have traced the existence of recipes back into history, in truth as far as the Egyptians, and quite possibly further than that. However, sadly, these early cook books were just very basic pictorial recipes for preparing meals.
Progressing into The time of the romans 25BC a man called Apicius compiled a number of scripts which described recipes prepared by wealthy Romans. In his works, he describes how the meals were split into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the Roman chefs made use of many different aromatic flavors, including a few that will be familiar to modern chefs such as basil, mint and asafoetida. In the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from the holy land, including spices like parsley and basil. These new herbs and spices created a surge in recipe publications, the majority of which are now in private cookery archives. By the arrival of the twentieth century, recipe publications are increasing in popularity due to better eduction, people having increased spare time and having more disposable income. |
