The History of Recipes
We are able to trace the history of written recipes back into the distant past, in fact as far back into recorded history as pharonic Egypt, and maybe further still. Interesting though that maybe, in the main part, these early cookbooks were just basic pictorial instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to historians is a series of tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. As we move into Roman times 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes prepared by the Romans. In his publication, he tells us how the roman meals were split into starters, entrees and afters, a style of dining still practiced today. Additionally, he recounts how the cooks of Roman times were skilled in the use of many different spices and herbs, including a few you will know such as bay, mint and parsley. Later, in the fifteenth century, the Crusaders brought back many new foods and spices from the holy lands, including coriander, parsley, and rosemary. These new spices and herbs was responsible for a surge in manuscripts on cookery, many of which still exist in academic collections. The revolution that is television brought us celebrity TV chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everybody to access massive numbers of recipes like those on this site. |
