The History of Recipes
We are able to track the history of `recipes` far back into antiquity, in truth as far into history as the ancient Egyptians, and possibly even further. Interesting though that is, these, ancient cook books were just very basic hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to academics are a few tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. As we move into The time of the romans around 25BC a roman called Apicius wrote a number of scripts which described recipes enjoyed by his fellow Romans. In his works, he describes how the roman meals were separated into hors d`oeuvre, main course and afters, something that is very familiar to us today. Aspicius recounts how the Roman chefs made use of a good variety of aromatic flavors, including a few you will know such as bay, rue and parsley. As we move on, we find two interesting recipe books which date from the 1300s ; a cookery book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, these are not about the spicy food that appears on menues today, but rather accounts of the types of meals served to the nobility of the time. Later, in the fifteenth century, people returning from the crusades brought back many new spices and herbs from Arab cuisine, such as rosemary and coriander. The introduction of these new culinary ideas prompted a torrent in manuscripts on cookery, some of which are now in private cookery archives. During the next few centuries, the powerful and rich houses tried to serve up the most exotic banquets, and because of this cooks and their recipe collections were at a premium. However, it wasn`t until the nineteenth century that cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, trying out, and writing down the recipes that were being prepared for the better households. By the advent of the 20th century, cook books are increasing in popularity mostly due to higher levels of literacy, more free time and having more disposable income. The revolution that is television gave us celebrity chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes such as those found on sites such as the one you are reading now. |
