1 1/2 cup light brown sugar, packed
1/2 cup butter or margarine - softened
2 eggs
1 tsp vanilla
1 1/2 cup flour, unsifted
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup raisins, chopped
1 1/2 cup carrots, finely grated
1/2 cup walnuts, finely chopped
Directions
Preheat oven to 350 F (moderate).
Grease a 9- by 13-inch baking pan.
Mix sugar and fat. Add eggs and vanilla; beat. Stir in dry
ingredients. Add raisins and carrots; stir. Spread mixture into
baking pan; sprinkle with walnuts. Bake about 40 minutes or until a
toothpick inserted in center comes out clean. Cool; cut into squares.

The History of Recipes
It is quite feasible to prove the history of recipes far back into history, certainly as far back into history as pharonic Egypt, and possibly even further. In practice though, generally, these early cook books were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
As we move into Roman times around 25BC a roman called Apicius compiled a number of documents detailing recipes cooked by the Romans. In his scrolls, he tells us how the meals were split into hors d`oeuvre, main meal and desserts, something we still use today. Additionally, he tells us how the ancient chefs used a good variety of spices, including some that we all recognise like thyme, rue and parsley. During the following few centuries, the rich and powerful families of Wesstern Europe competed to offer the most exotic banquets, and because of this the best cooks and their recipe collections increased in prestige. Even so, it wasn`t until the 19th century that cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, testing, and writing down recipes that were common in the better off homes of the day. By the advent of the 1900s, cookery books were in great demand, mostly due to higher levels of literacy, people having more leisure time and a general increase in wealth. |
