The History of Recipes
It is quite possible to track the history of transcribed cooking instructions way back into ancient history, certainly as far as the early Egyptians, and potentially, even further back. In practice though, sadly, these early records were just very simple hieroglyphic or cunieform instructions for food preparation.
Progressing into The time of the romans around 25BC a man called Apicius compiled some scripts detailing recipes prepared by the Romans. In his scrolls, Apicius recounts how the meals were separated into starters, entrees and afters, a style of dining still practiced today. Additionally, he tells us how the ancient Romans used a wide range of spices and herbs, including a few that will be familiar to modern cooks for example thyme, rue and asafoetida. During the following few centuries, the rich families of Europe competed to lay on the most exotic banquets, and as a consequence, the best chefs and their recipe collections were highly sought after. Notwithstanding that, it was during the 1800s the formal cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to assembling, testing, and publishing the recipes of their peers. By the advent of the 1900s, recipe books were highly popular mostly due to more people being able to read, people having increased spare time and being a little richer. |
