The History of Recipes
We are able to follow the history of `recipes` back into the distant past, in fact as far as the ancient Egyptians, and potentially, even further back. In practice though, in the main part, these old recipes were just very simple hieroglyphic or cunieform recipes for meal preparation.
Later on, in The time of the roman empire around 25BC a man called Apicius assembled a number of documents showing how to cook the recipes prepared by wealthy roman citizens. In his publication, Apicius describes how the meals of wealthy Romans were separated into appetizers, main course and desserts, something we still use today. Additionally, he informs us how the chefs of Roman times were skilled in the use of a good variety of aromatic flavors, including many that are still in use today such as thyme, rue and dill. Later, in the fifteenth century, the Crusaders brought back many new spices and herbs from Arab countries, including spices like basil and rosemary. The introduction of these new tastes created a torrent in books on cookery, most of which are kept safe in academic collections. By the advent of the 20th century, recipe books are starting to become popular mostly due to more people being able to read, people having increased spare time and disposable income. |
