The History of Recipes
It is quite possible to prove the history of recipes far back into the distant past, at least as far back as pharonic Egypt, and maybe even further. Having said that, sadly, these early cook books were just basic pictorial recipes for preparing food.
Fascinatingly, the oldest recipe discovered, according to Professor Solomon Katz, is a series of clay tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. As we move into The time of the roman empire 25BC a roman called Apicius created a few documents describing recipes enjoyed by wealthy roman citizens. In his works, Apicius recounts how the meals were separated into starters, main course and afters, a very modern way of dining. This early Roman chef recounts how the Roman cooks made use of many different herbs, including a few that will be familiar to modern chefs for example bay, fennel and parsley. In the fifteenth century, people returning from the crusades brought us many foods, spices and herbs from the holy lands, including rosemary and coriander. These new spices and herbs led to a torrent in manuscripts on cookery, the majority of which are kept safe in academic collections. Over the following few hundred years, the upper classes competed with each other to serve up the best banquets, and consequentially the best cooks and their recipe collections were greatly in demand. Even so, it was during the nineteenth century that cooking and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collating, verifying, and publishing recipes common in their social group. By the arrival of the 20th century, cookery books are in high demand, due to better eduction, people having increased free time and being a little richer. The introduction of television gave us cooking programs and the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting us all to search through massive numbers of recipes like those on the site you are now reading. |
