The History of Recipes
We are able to trace the history of written recipes way back into the far past, in truth as far back as ancient Egypt, and potentially, even further back. However, mostly, these ancient cook books were just simple pictorial recipes for preparing food.
Fascinatingly, the most ancient recipe found, according to experts in ancient history are some clay tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. Progressing into The time of the romans 25BC a roman called Apicius created a few scripts showing how to cook the recipes cooked by his fellow Romans. He describes how the meals were divided into starters, main course and dessert, something we still use today. Additionally, he recounts how the ancient cooks used a good variety of spices, including a few that will be familiar to modern cooks for example basil, rue and asafoetida. As our culinary historical trip moves to more modern times we find some interesting books from the 1300s ; a book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are a little misleading though, they are not about the indian food that is familiar to us all today, but instead accounts of the types of meals cooked for the rich and powerful of that period. In the 15th century, people returning from the crusades brought us a variety of foods, spices and herbs from the East, including spices such as rosemary and coriander. The introduction of these new tastes was responsible for an increase in recipe manuscripts, most of which are kept safe in private cookery archives. By the arrival of the twentieth century, cookbooks were greatly in demand due to increased literacy, leisure time and a general increase in wealth. |
