The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into the far past, certainly as far as the early Egyptians, and possibly even further. However, sadly, these old cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe discovered so far, according to Professor Solomon Katz, are some tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire around 25BC a roman called Apicius created some documents detailing recipes prepared by wealthy Romans. In his works, Apicius describes how the meals were divided into starters, main course and desserts, a style of dining still practiced today. Additionally, he recounts how the ancient cooks used many herbs, including a few you will know like bay, rue and dill. Over the following few centuries, the powerful and rich competed to lay on the best banquets, and because of this cooks and their collection of recipes were highly sought after. Nevertheless, it was during the nineteenth century that fine cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collecting, verifying, and writing down recipes to help cooks of their time. When we get to the 1900s, cookbooks were highly popular due to higher levels of literacy, more free time and being a little richer. |
