8 oz shiitakes
1 tbsp olive oil
1 tbsp tamari
1 tbsp garlic, crushed
1 tsp rosemary, minced
1 salt & black pepper
1 tsp maple syrup
1 tsp sesame oil, otional
Directions
Rinse mushrooms. Remove & discard stems. Toss mushrooms with
remaining ingredients & marinate for 5 minutes. Grill caps over coals
until lightly charred. Serve hot.

The History of Recipes
Written recipes as a concept can be tracked far back into distant history, at least as far into history as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, mostly, these ancient records were just very basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe in existence, according to academics is a collection of stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. During Roman times 25BC a man called Apicius compiled a few documents detailing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. Additionally, he tells us how the Romans were skilled in the use of many herbs, including a few that will be familiar to modern chefs like thyme, mint and parsley. During the succeeding few centuries, the wealthy families of the West competed to serve the most exotic meals, and as a consequence, the best chefs and their collection of recipes were much in demand. Nevertheless, it wasn`t until the 1800s that haute cuisine and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collating, verifying, and publishing recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking books were highly popular mostly as a result of more people being able to read, people having increased leisure time and having more disposable income. Like it or not, the introduction of television brought us TV cooks and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to access massive numbers of recipes like the ones you can find on the site you are now reading. |
