The History of Recipes
We are able to follow the history of `recipes` far back into the far past, in truth as far as the early Egyptians, and quite possibly further than that. However, in the main part, these old recipes were just basic hieroglyphic recipes for meal preparation.
Fascinatingly, the oldest recipe found, according to experts in ancient history are a few stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. During Roman times around 25BC a man called Apicius assembled a number of documents detailing recipes cooked by the Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into starters, main meal and desserts, something that is very familiar to us today. This early Roman chef recounts how the cooks of his times used a good variety of spices and herbs, including some that we all recognise for example thyme, rue and parsley. In the fifteenth century, the Crusaders brought back many foods, spices and herbs from the East, including spices like coriander, parsley, basil and rosemary. These new foods and tastes was responsible for an eruption in recipe books, some of which are now in private cookery archives. Over the following few hundred years, the powerful families of Wesstern Europe competed to offer the best banquets, and as a result the best chefs and their collection of recipes increased in prestige. However, it was during the 19th century that cookery and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collecting, testing, and recording recipes of the day. Like it or not, the introduction of television brought us TV cookery programs and the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing everyone to access thousands of recipes such as those found on this site. |
