Cheddar Crackers Recipe

Ingredients

1/2 cup butter or margarine
1 1/2 cup unbleached flour, sifted
1/2 tsp salt
1 tsp baking powder
1 dash cayenne pepper
2 cup cheddar, extra sharp, *


Directions

* The Extra Sharp Cheddar Cheese should be finely grated.

++++++++++++++ ++++ Stir the dry ingredients into a bowl and then cut
in the butter to resemble cornmeal. Blend in the cheddar cheese with
a fork until well blended. Mix in the remaining ingredients and shape
into 1 1/2 to 2-inch rolls. Chill for 30 to 40 minutes in the
refrigerator and then slice each roll into slices about 1/4-inch
thick. Bake on an ungreased cookie sheet at 400 degrees F for about
10 minutes. Remove from cookie sheet and let cool. Store the cooled
crackers in airtight containers in a cool place. They will keep for
several weeks this way and if you freeze them, they will last
indefinitely.

During Roman times around 25BC a roman called Apicius compiled a number of documents describing recipes cooked by wealthy roman citizens. In his publication, Apicius describes how the roman meals were separated into hors d`oeuvre, entrees and dessert, something we still use today. Additionally, he recounts how the ancient chefs made use of many herbs, including some that we all recognise such as thyme, rue and asafoetida.

During the succeeding few hundred years, the rich and powerful families of Wesstern Europe competed with each other to lay on the most extravagent meals, and consequentially chefs and their recipe collections were at a premium. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe books became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, verifying, and writing down the recipes that were being prepared for the better households.

By the arrival of the 1900s, cookery books were in high demand, mostly as a result of better eduction, leisure time and having more disposable income.

Like it or not, the introduction of television brings us cooking programs and the demand for the accompanying recipe books.
