The History of Recipes
Written recipes as a concept can be found far back into the far past, in fact as far into history as early Egypt, and possibly even further. Interesting though that maybe, these, early cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. During the time of the Romans a roman called Apicius created a few scripts showing how to cook the recipes enjoyed by his fellow Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. Aspicius informs us how the cooks of his times made use of a good variety of herbs, including many that are still in use today like bay, rue and dill. Later on, in the 15th century, people returning from the crusades brought us a variety of foods and herbs from middle-east cuisine, such as parsley and basil. The introduction of these new herbs and spices caused an explosion in books on cookery, many of which are now in private libraries. When we get to the 20th century, cookbooks were greatly in demand mostly as a result of higher levels of literacy, more free time and being a little richer. The arrival of TV gave us TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes such as those found on the site you are now reading. |
