8 oz cheddar, md, grated
3/4 cup dairy sour cream
3 each egg yolks, lg, beaten
2 tsp unbleached flour, plus
1 tsp unbleached flour
3/4 tsp salt
1 1/2 tsp thyme
1/2 tsp mustard, dry
2 tsp butter
Directions
Set out a heavy skillet. Put the grated Cheddar Cheese in a bowl and
add the sour cream and egg yolks, mixing well after each addition.
Add the flour salt thyme and dry mustard, which have been mixed well
in a separate bowl or cup. Melt the butter in the skillet over low
heat and drop the batter by tsp into the skillet. Cook over medium
heat until lightly browned on the bottom. Loosen the edges with a
spatula, turn and lightly brown the other side. Serve at once with
bacon or pork sausage. Makes about 2 dozen 3-inch cakes.

The History of Recipes
We can read the history of `recipes` far back into history, certainly as far back into history as the Egyptians, and maybe further still. In practice though, in the main part, these old cook books were just primitive hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe discovered, according to experts in ancient history are a few ancient tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. Later on, in Roman times around 25BC a roman called Apicius wrote a few documents detailing recipes enjoyed by wealthy roman citizens. In his publication, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, something that is very familiar to us today. He also informs us how the early Romans made use of many different aromatic flavors, including a few that are still present in modern kitchens for example basil, fennel and parsley. Later on in the 1400s, people returning from the crusades brought back a variety of foods, spices and herbs from the holy land, including coriander, parsley, and basil. The introduction of these new tastes caused an eruption in manuscripts on food, some of which still exist in academic collections. The introduction of the TV gave us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes like those on sites such as this. |
