1 1/2 cup all-purpose flour
1 cup yellow cornmeal
1 1/2 tsp baking powder
1 tbsp sugar
1/2 tsp salt
1 cup shredded cheddar cheese
1/2 cup minced onion
1 1/2 cup milk
1/4 cup melted butter
2 eggs, lightly beaten
Directions
1. Heat oven to 350 degrees. Lightly grease muffin tins. Mix flour,
cornmeal, baking powder, sugar and salt in large bowl. Add cheese and
onion; mix well. Add milk, melted butter and eggs; stir just until dry
ingredients are moistened. Do not overmix.
2. Spoon into prepared muffin tins, filling two-thirds full. Bake
until puffed and golden, 30 to 40 minutes. Cool on wire rack.

The History of Recipes
We are able to follow the history of meal recipes far back into ancient history, at least as far back as the Egyptians, and possibly even further. Interesting though that is, in the main part, these old cook books were just very basic hieroglyphic recipes for preparing food.
Later on, in The time of the roman empire around 25BC a roman called Apicius created a collection of scripts detailing recipes cooked by wealthy Romans. In his works, he describes how the meals were separated into appetizers, main meal and dessert, a style of dining still practiced today. This early Roman chef describes how the ancient chefs were skilled in the use of a good variety of spices and herbs, including a few that will be familiar to modern chefs such as thyme, rue and dill. During the following few hundred years, the upper classes competed to serve up the best banquets, and as a consequence, cooks and their recipes were highly sought after. However, it was during the 19th century that fine cookery and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, testing, and publishing the recipes that were being prepared for the better households. The arrival of television gave us TV cookery programs and the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to access thousands of recipes such as those found on this site. |
