The History of Recipes
Written recipes as a concept can be traced far back into ancient history, in fact as far as the ancient Egyptians, and potentially, even further back. Interesting though that is, mostly, these early records were just very basic hieroglyphic recipes for food preparation.
Much later, in Roman times a roman called Apicius created a collection of documents showing how to cook the recipes prepared by wealthy Romans. In his works, he describes how the meals were separated into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Aspicius describes how the cooks of his times used a wide range of aromatic flavors, including a few you will know such as basil, mint and asafoetida. Over the succeeding few hundred years, the rich and powerful families of the West strove to lay on the most exotic banquets, and consequentially the best chefs and their recipes were greatly in demand. However, it wasn`t until the 19th century the formal cooking and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, trying out, and writing down the recipes that were being prepared for the better households. The TV revolution gave us celebrity TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes just like those on sites such as this. |
