The History of Recipes
Transcribed cooking instructions as an idea can be observed way back into the distant past, in truth as far as pharonic Egypt, and quite possibly further than that. In practice though, generally, these early recipes were just very simple hieroglyphic recipes for preparing food.
Fascinatingly, the most ancient recipe found, according to Professor Solomon Katz, are some clay tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As we move into The time of the roman empire around 25BC a man called Apicius assembled a few documents which described recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, entrees and afters, a very modern way of dining. This early Roman chef informs us how the ancient cooks used a wide range of herbs, including a few that will be familiar to modern cooks like basil, fennel and dill. In the 15th century, the Crusaders brought back many new foods and spices from the East, including rosemary and coriander. These new culinary innovations caused an outbreak in cookery books, the majority of which are now in academic collections. The arrival of TV brought us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everyone to search through thousands of recipes just like those on the site you are now reading. |
