The History of Recipes
It is quite feasible to track the history of written cooking instructions way back into the distant past, in fact as far back into history as the Egyptians, and potentially, even further back. In practice though, these, ancient records were just very basic hieroglyphic instructions for food preparation.
In fact, the oldest recipe found, according to food historians are some stone tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Progressing into The time of the roman empire 25BC a roman called Apicius wrote some documents describing recipes prepared by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were split into appetizers, main course and dessert, a very modern way of dining. He also informs us how the ancient Romans used a good variety of spices, including a few that will be familiar to modern chefs such as bay, rue and parsley. Later on, we find some recipe books which were published in the 14th Century - a book titled `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these two books are not about the curry that we all know today, but rather recipes for the types of food enjoyed by the rich and wealthy people of that period. Later on in the 1400s, people returning from the crusades brought back many foods and herbs from the East, including coriander, basil and rosemary. These new herbs and spices created a torrent in publications on food, the majority of which still exist in private libraries. By the time we get to the 20th century, cook books are in great demand, mostly as a result of increased literacy, people having more leisure time and having more money to spend. The introduction of the TV gave us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes such as those found on this recipe site. |
