1 cup unbleached flour
1/2 lb sharp cheddar cheese, grated
1/2 cup softened butter or margarine
1 tsp cayenne
Directions
Mix all ingredients and shape in 1-inch balls. Arrange about 2 inches
apart on baking sheet and bake in very hot oven (450 degrees F.)
about 6 minutes. Serve hot or cool. Makes about 4 dozen NOTE:
Reduce the amount of cayenne pepper for a milder wafer.

The History of Recipes
It is actually possible to trace the history of recipes far back into the far past, certainly as far back as the Egyptians, and maybe even further. Having said that, in the main part, these ancient cook books were just basic pictorial recipes for preparing meals.
The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, is a collection of stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. As we move on, we find two interesting books from the 1300s - one book entitled `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, these books are unconnected to the spicy food that appears on menues today, but rather descriptions of the types of food on the tables of the rich and wealthy people of those days. During the next few centuries, the powerful and rich competed with each other to serve the best banquets, and as a consequence, chefs and their recipes were greatly in demand. Nevertheless, it wasn`t until the 19th century that fine cooking and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collecting, trying out, and writing down recipes common in their social group. The revolution that is television gave us cooking programs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to access thousands of recipes such as those found on our site. |
