The History of Recipes
We can track the history of meal recipes back into the distant past, at least as far back as the early Egyptians, and possibly even further than that. However, in the main part, these ancient recipes were just basic hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the oldest recipe in existence, according to historians is a series of tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Progressing into The time of the romans 25BC a roman called Apicius created a collection of scripts describing recipes cooked by wealthy Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. He also recounts how the early Romans were skilled in the use of many spices and herbs, including a few that will be familiar to modern cooks like basil, fennel and parsley. Over the next few centuries, the upper classes competed with each other to serve the most extravagent meals, and as a consequence, chefs and their collection of recipes were much in demand. However, it wasn`t until the 19th century that cookery and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collating, testing, and publishing recipes to help cooks of their time. By the arrival of the twentieth century, cookery books are in high demand, mostly as a result of more people being able to read, leisure time and having more money. |
