3/4 cup yellow cornmeal
1/2 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1/8 tsp red pepper
1 cup shredded monterey jack cheese
1 can chopped green chiles (4oz), drained
1 tbsp minced onion
1 egg
1/2 cup milk
1 vegetable oil
Directions
Combine first 8 ingredients in a large bowl; make a well in center
of mixture. Combine egg and milk; add to dry ingredients, stirring
just until moistened. Pour oil to a depth of 3 inches into a Dutch
oven; heat to 375 deg. Carefully drop batter by rounded
tablespoonsful into hot oil. Fry a few at a time 3 to 4 minutes or
until golden brown, turning once. Drain on paper towels. Serve
immediately. Yield: about 2 dozen.

The History of Recipes
It is possible to track the history of written recipes back into history, in truth as far as the Egyptians, and possibly even further than that. In practice though, sadly, these ancient records were just very basic hieroglyphic recipes for meal preparation.
In fact, the most ancient recipe discovered so far, according to experts is a series of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. Later on, in The time of the romans around 25BC a man called Apicius compiled a few documents which described recipes prepared by wealthy Romans. He tells us how the meals of wealthy Romans were divided into starters, main meal and afters, something we still use today. This early Roman chef tells us how the Roman cooks were skilled in the use of a wide range of herbs and spices, including many that are still in use today for example bay, rue and dill. Later, in the fifteenth century, the Crusaders brought back many new foods, spices and herbs from middle-east cuisine, such as coriander, parsley, basil and rosemary. These new culinary innovations was responsible for an explosion in manuscripts on cookery, most of which are now in academic collections. For the decades that followed, the wealthy families of the West tried to lay on the best banquets, and because of this cooks and their collection of recipes became highly prized. Notwithstanding that, it was during the 19th century the formal cooking and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, verifying, and recording the recipes of their peers. By the time we get to the 1900s, cooking books were increasing in popularity due to higher levels of literacy, people having more free time and disposable income. |
