PINEAPPLE LAYER
1/3 cup sugar
1 tbsp cornstarch
1 can (8oz) crushed pineapple
1 with juice
CREAM CHEESE LAYER
1 (8oz) cream cheese,
1 softened
1/2 cup sugar
1 tsp salt
2 eggs
1/2 cup milk
1/2 tsp vanilla
1 9-in unbaked pie shell
1/4 cup chopped pecans
Directions
Cheese Pineapple Pie Combine sugar, cornstarch and pineapple plus
juice in a small saucepan. Cook over medium heat, stirring constantly
until mixture is in mixer bowl. Add 2 eggs, one at a time, beating
after each addition. Blend in milk and vanilla. (If mixture looks
slightly curdled, don't worry ~ it bakes out.) Spread cooled
pineapple layer over bottom of pie shell. Pour cream cheese mixture
over pineapple; sprinkle with pecans. Bake at 400 degrees for 10
minutes; reduce heat to 325 and bake for 50 minutes. Cool.

The History of Recipes
Recipes as a concept can be found way back into antiquity, at least as far into history as the ancient Egyptians, and quite possibly further than that. Interesting though that is, mostly, these early cookbooks were just simple pictorial recipes for meal preparation.
Continuing our culinary historical journey, there were some recipe books dating from the fourteenth century - a book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are nothing to do with the curry that is popular today, but instead accounts of the types of meals enjoyed by the rich and powerful of the time. When we get to the twentieth century, cookery books were in great demand, mostly due to higher levels of literacy, more leisure time and a general increase in wealth. |
