The History of Recipes
Academics have found proof that recipes existed way back into the distant past, in truth as far as early Egypt, and maybe even further. Having said that, mostly, these ancient records were just very basic hieroglyphic instructions for food preparation.
Interestingly, the most ancient recipe found, according to food historians are some tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Later on, in Roman times 25BC a man called Apicius assembled a collection of scripts which described recipes prepared by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and afters, something that is very familiar to us today. Aspicius also describes how the Roman chefs made use of a wide range of spices and herbs, including some that we all recognise such as bay, mint and parsley. Closer to modern times, there are two interesting cookery books which appeared in the 1300s - a book titled `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, these books have no connection with the curry that appears on menues today, but instead descriptions of the types of meals cooked for the rich people of those days. In the fifteenth century, the Crusaders brought back many new foods and herbs from the Middle-East, including spices such as coriander, basil and rosemary. The introduction of these new foods and spices created an explosion in manuscripts on food, some of which are kept safe in academic collections. Like it or not, the introduction of television brought us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes just like those on this site. |
