The History of Recipes
It is possible to track the history of meal recipes far back into history, in fact as far back into recorded history as the early Egyptians, and potentially, even further back. Interesting though that maybe, mostly, these old cookbooks were just primitive hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the oldest recipe found, according to food historians are some clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. Later on, in The time of the roman empire around 25BC a roman called Apicius assembled a few documents describing recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the roman meals were divided into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. He also recounts how the chefs of Roman times used many spices, including a few you will know for example bay, mint and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back many foods and spices from the East, including spices such as basil and rosemary. The introduction of these new herbs and spices prompted a surge in recipe books, some of which are kept safe in academic collections. During the following few hundred years, the upper-class families of Wesstern Europe competed with each other to serve the most extravagent banquests, and as a result chefs and their collection of recipes were at a premium. Even so, it wasn`t until the 1800s that cookery and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and publishing the recipes of their peers. The arrival of television brings us cooking programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes like the ones you can find on this web site. |
