The History of Recipes
It is quite possible to prove the history of recipes back into history, certainly as far back into recorded history as the ancient Egyptians, and possibly even further. Having said that, mostly, these early recipes were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe found, according to experts in ancient history are a few tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful. During Roman times 25BC a man called Apicius compiled a few documents detailing recipes prepared by his fellow Romans. In his scrolls, he tells us how the roman meals were split into hors d`oeuvres, main course and dessert, a style of dining still practiced today. He also describes how the ancient chefs were skilled in the use of a good variety of spices and herbs, including a few that will be familiar to modern chefs like thyme, mint and dill. In the fifteenth century, the Crusaders brought back a variety of spices and herbs from the Middle-East, including spices such as parsley, basil and rosemary. The introduction of these new foods and spices created an increase in publications on food, many of which are kept safe in private cookery archives. During the succeeding few centuries, the wealthy families of the West competed to serve the most exotic banquets, and as a result chefs and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, testing, and publishing recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking books were highly popular mostly due to increased literacy, increased leisure time and a general increase in wealth. |
