CRUST
1 cup flour
1/4 cup sugar
1 tsp lemon rind
1/4 tsp vanilla
1 egg yolk
1/4 cup butter, softened
CAKE FILLING
2 1/2 lb cream cheese
1 3/4 cup sugar
3 1/2 tsp flour
1/2 tsp orange rind
1/2 tsp lemon rind
1/4 tsp vanilla
5 eggs
2 egg yolks
1/4 cup cream
Directions
Mix crust ingredients; press into a baking pan. Bake
10 minutes at 400 degrees F.
Combine filling ingredients; mix well and pour into baked crust. Bake
at 450 degrees F. for 10-12 minutes. Reduce to 200 degrees F. for 1
hour.

The History of Recipes
It is quite feasible to follow the history of recipes way back into the distant past, in truth as far back as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, these, early cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe in existence, according to experts is a series of tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Moving on, there are two books published in the 1300s ; a recipe book called `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are somewhat misleading tho`, these are unconnected to the spicy food that we all know today, but instead descriptions of the types of meals prepared for the nobility of the period. During the next few hundred years, the powerful families of the West tried to offer the most extravagent banquests, and as a consequence, chefs and their recipe collections became highly prized. However, it wasn`t until the 19th century that fine cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, trying out, and writing down recipes that were common in the better off homes of the day. By the time we get to the twentieth century, recipe books are starting to become popular as a result of more people being able to read, leisure time and disposable income. |
