CRUST
1 cup flour
1/4 cup sugar
1 tsp lemon rind
1/4 tsp vanilla
1 egg yolk
1/4 cup butter, softened
CAKE FILLING
2 1/2 lb cream cheese
1 3/4 cup sugar
3 1/2 tsp flour
1/2 tsp orange rind
1/2 tsp lemon rind
1/4 tsp vanilla
5 eggs
2 egg yolks
1/4 cup cream
Directions
Mix crust ingredients; press into a baking pan. Bake
10 minutes at 400 degrees F.
Combine filling ingredients; mix well and pour into baked crust. Bake
at 450 degrees F. for 10-12 minutes. Reduce to 200 degrees F. for 1
hour.

The History of Recipes
Academics have traced the existence of recipes back into the distant past, certainly as far back as the Egyptians, and possibly even further. However, sadly, these ancient records were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe in existence, according to experts in ancient history is a series of ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Progressing into The time of the romans 25BC a man called Apicius assembled a number of documents describing recipes cooked by wealthy Romans. In his publication, Apicius tells us how the meals were divided into starters, main course and desserts, a style of dining still practiced today. Aspicius tells us how the Roman cooks were skilled in the use of many spices, including a few that are still present in modern kitchens like basil, rue and asafoetida. In the 15th century, the Crusaders brought back many foods, spices and herbs from Arab countries, such as basil and rosemary. These new foods and spices was responsible for an increase in books on cookery, many of which are now in academic collections. Over the next few centuries, the powerful families of Wesstern Europe competed with each other to serve the best banquets, and as a consequence, cooks and their collection of recipes increased in prestige. Nevertheless, it was during the nineteenth century that fine cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, testing, and recording recipes to allow everyone to enjoy them. The introduction of television brought us cooking programs and the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes like the ones you can find on this web site. |
