PIE CRUST
3 tbsp sugar
1 tsp cinnamon
6 tbsp margarine into chunks
1 cup matzo meal
CHEESE CAKE
1 lb cream cheese
2 eggs
1/2 cup sugar
1 tsp vanilla- or
1 tbsp orange juice
TOPPING
1 cup sour cream
2 tbsp sugar
1/2 tsp vanilla
1 pie crust
Directions
Combine all ingredients in processor bowl and process until well
blended. Press into bottom and up sides of a greased 9" pie plate. Do
not bake.
Cheese cake
Process cheese with eggs, sugar and vanilla for 30 sec. Spread cheese
mixture over crust. Bake in 375 oven for 25-30 min. or until set.
Cool.
Topping
Combine all ingredients and process. Spread over cake and return to
oven for five min. Cool and chill.

The History of Recipes
Written recipes as an idea can be traced back into the distant past, in truth as far back as the Egypt of the Pharoahs, and possibly even further. Interesting though that maybe, these, ancient records were just very basic pictorial recipes for meal preparation.
In an interesting twist, the most ancient recipe found, according to experts are a few stone tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful. Later on, in The time of the romans 25BC a man called Apicius assembled some documents which described recipes cooked by the Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvre, main meal and dessert, something we still use today. Aspicius informs us how the cooks of his times made use of many aromatic flavours, including a few that will be familiar to modern chefs for example thyme, fennel and asafoetida. Continuing our culinary historical journey, there are two interesting recipe books published in the 1300s : a recipe book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Although the titles sound familiar, these are unconnected to the curry that is familiar to us all today, but rather recipes for the types of meals on the menues of the nobility of those days. Later on, in the 15th century, the Crusaders brought back many new foods and spices from the East, including spices such as basil and rosemary. The introduction of these new herbs and spices prompted an eruption in manuscripts on food, most of which still exist in private collections. When we get to the 20th century, recipe publications were starting to become popular as a result of increased literacy, more spare time and disposable income. |
