2 tbsp unsalted butter
1 medium onion, roughly diced
1 1/2 lb cooked or uncooked broccoli roughl, y chopped
1 tsp salt
1 capful pernod (optional)
3 qt chicken stock or water, or canned low-sodium bro
3 cup milk and/or whipping cream
1 grated jack, velveeta, -or- swiss cheese
Directions
MELT BUTTER in a large pot over medium heat. Add the onion and cook,
stirring occasionally, until onion softens, about 10 minutes. Add the
broccoli, salt and optional Pernod. Continue to cook, stirring,
another 15 minutes. Add the stock. Cover, increase heat to high and
bring to a boil. Reduce heat to low and simmer 15 minutes. Remove
from heat and place in a food processor or blender and puree until
smooth. Combine puree, cream and milk. Serve piping hot and offer the
grated cheese on the side to add to the soup.

The History of Recipes
We are able to follow the history of written recipes way back into distant history, at least as far into history as the Egypt of the Pharoahs, and quite possibly further than that. However, mostly, these old recipes were just very simple pictorial recipes for preparing meals.

As we move on, there were some recipe books published in the fourteenth century : a book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these books are unconnected to the spicy food that appears on menues today, but instead accounts of the types of food on the tables of the rich people of the period. During the following few hundred years, the upper-class families of the West competed to offer the most extravagent banquests, and because of this the best cooks and their collection of recipes could command a high salary. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, verifying, and publishing recipes common in their social group. The arrival of television brings us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes such as those found on our web site. |
