The History of Recipes
We can follow the history of meal recipes far back into the far past, in fact as far back into history as the early Egyptians, and possibly even further than that. In practice though, in the main part, these ancient recipes were just very basic pictorial instructions for preparing meals.
Progressing into The time of the roman empire 25BC a roman called Apicius created some documents showing how to cook the recipes enjoyed by the Romans. In his publication, Apicius tells us how the roman meals were separated into hors d`oeuvres, main course and dessert, a style of dining still practiced today. Additionally, he describes how the ancient cooks made use of many herbs, including many that are still in use today for example thyme, rue and asafoetida. For the centuries that followed, the powerful and rich strove to serve up the best banquets, and because of this cooks and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the nineteenth century that formal cookery and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collating, verifying, and recording the recipes of their peers. By the time we get to the 20th century, cookbooks are greatly in demand due to higher levels of literacy, people having more free time and being a little richer. |
