The History of Recipes
It is quite possible to trace the history of written cooking instructions way back into the far past, certainly as far back as early Egypt, and possibly even further than that. Interesting though that maybe, in the main part, these ancient cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. As we move into Roman times around 25BC a roman called Apicius assembled a collection of documents describing recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, something that is very familiar to us today. He also informs us how the ancient chefs used a wide range of aromatic flavors, including a few that are still present in modern kitchens like thyme, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought back many foods and herbs from Arab countries, such as coriander, parsley, and rosemary. The introduction of these new herbs and spices caused an eruption in manuscripts on cooking, some of which are kept safe in private collections. By the advent of the 1900s, cooking books are in high demand, mostly as a result of more people being able to read, more free time and being a little richer. Like it or not, the introduction of TV brings us cooking programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to access thousands of recipes just like those on sites such as the one you are reading now. |
