The History of Recipes
Food historians have found proof that recipes existed far back into history, at least as far back into history as early Egypt, and possibly even further than that. However, sadly, these early recipes were just basic hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe discovered so far, according to experts is a series of tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. Closer to modern times, we find a couple of interesting books which appeared in the 14th Century ; a recipe book called `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, they are unconnected to the curry that appears on menues today, but rather descriptions of the types of food prepared by the cooks of the nobility of the time. In the fifteenth century, people returning from the crusades brought back many foods and herbs from Arab cuisine, such as parsley and basil. These new herbs and spices was responsible for an eruption in manuscripts on cooking, some of which are now in academic collections. During the succeeding few hundred years, the powerful and rich houses competed with each other to offer the most extravagent meals, and because of this cooks and their recipe collections were highly sought after. Nevertheless, it was during the 19th century that formal cookery and recipe publications rose to prominence. Mrs Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collecting, testing, and recording popular recipes of the day. Like it or not, the introduction of television gave us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing everybody to access massive numbers of recipes such as those found on this web site. |
