The History of Recipes
We can follow the history of `recipes` way back into distant history, in fact as far as early Egypt, and maybe further still. Interesting though that maybe, generally, these old cookbooks were just primitive pictorial recipes for preparing food.
In fact, the most ancient recipe in existence, according to historians is a series of stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a roman called Apicius assembled a few documents showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he describes how the roman meals were split into appetizers, main meal and dessert, something we still use today. Aspicius also describes how the early Romans were skilled in the use of many aromatic flavours, including some familiar names such as bay, mint and dill. For the centuries that followed, the upper-class families of Wesstern Europe strove to lay on the most exotic meals, and as a consequence, the best cooks and their collection of recipes were greatly in demand. Even so, it was during the 19th century that fine cookery and recipe books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to collating, trying out, and writing down recipes for their fellow cooks to enjoy. By the time we get to the 20th century, cookery publications were starting to become popular mostly as a result of more people being able to read, people having more leisure time and having more money. |
