The History of Recipes
It is possible to track the history of meal recipes back into antiquity, in truth as far back into recorded history as ancient Egypt, and possibly even further. In practice though, these, ancient recipes were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe discovered, according to experts in ancient history is a collection of clay tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful. Later, there are a couple of interesting cookery books which date from the 1300s ; a book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, these books have no connection with the indian food that appears on menues today, but rather recipes for the types of food eaten by the rich people of that period. For the decades that followed, the wealthy families of the West tried to serve the most exotic meals, and consequentially cooks and their recipe collections could command a high salary. However, it wasn`t until the 1800s that haute cuisine and recipe publications became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, testing, and publishing recipes of the day. By the time we get to the 20th century, cooking books were increasing in popularity mostly due to better eduction, more free time and a general increase in wealth. |
