1/2 oz butter
1 cooking apple, peeled, cored sliced
12 oz red or black cherries, pitted and r, oughly choppe
2 tbsp caster sugar, to taste
1/4 pt double cream
8 oz natural fromage frais
TO DECORATE
4 whole cherries, with stalks
Directions
Melt the butter in a pan and cook the apple gently until it starts to
soften.
Add cherries and cook for a further five minutes.
Stir in the sugar to taste, then set aside until cold.
Whip cream until stiff and holding its shape. Fold in the fromage
frais until evenly combined.
Spoon alternate layers of fruit and cream into four individual stemmed
glasses.
Chill in the fridge until firm (can be made well in advance).
Serve decorated with whole cherries for a stylish touch.

The History of Recipes
Recipes as a concept can be found back into the distant past, certainly as far into history as the early Egyptians, and maybe further still. Having said that, mostly, these ancient cook books were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the oldest recipe found, according to experts are a few clay tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. Progressing into Roman times 25BC a man called Apicius assembled a number of documents describing recipes cooked by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. Additionally, he recounts how the chefs of Roman times made use of a good variety of herbs, including a few you will know like thyme, fennel and dill. Over the succeeding few centuries, the powerful families of Wesstern Europe competed with each other to lay on the most exotic banquets, and as a result the best cooks and their collection of recipes became highly prized. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, verifying, and publishing recipes that were common in the better off homes of the day. The TV revolution brought us cooking programs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes such as those found on the site you are now reading. |
