1 cup Firm tofu, (bean curd) sliced
1 large Garlic clove, minced
2 tbsp Low-sodium soy sauce
1 Lemon, juice with plup
1/4 tsp Dried leaf oregano
1/4 tsp Dried leaf marjoram
3 tbsp Balsamic vinegar
3 Green onions, chopped
1/4 cup Water, about
Directions
Place tofu slices in a blender or a food processor fitted with the
metal blade. Add remaining ingredients and only as much water as
needed to make desired consistencey. Process until smooth. Makes 2

The History of Recipes
Recipes as a concept can be traced back into the distant past, certainly as far into history as the ancient Egyptians, and maybe even further. Interesting though that maybe, these, ancient cook books were just primitive pictorial, hieroglyphic or cunieform recipes for preparing meals.
Progressing into Roman times 25BC a man called Apicius assembled a number of scripts describing recipes cooked by the Romans. In his publication, Apicius recounts how the meals were divided into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. Aspicius also tells us how the Romans used many herbs, including a few that will be familiar to modern cooks like basil, fennel and asafoetida. Over the succeeding few hundred years, the powerful families of Wesstern Europe competed with each other to lay on the most exotic banquets, and as a result chefs and their recipe collections increased in prestige. Even so, it wasn`t until the 1800s the formal cooking and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, verifying, and publishing recipes to allow everyone to enjoy them. When we get to the twentieth century, recipe publications were in high demand, mostly due to increased literacy, increased leisure time and a general increase in wealth. |
