The History of Recipes
Written cooking instructions as a concept can be traced back into history, in fact as far back into history as the ancient Egyptians, and maybe even further. In practice though, sadly, these ancient recipes were just very simple hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the most ancient recipe found, according to food historians is a series of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius compiled a collection of documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his scrolls, he describes how the meals of wealthy Romans were split into starters, main meal and afters, something we still use today. This early Roman chef describes how the Romans made use of a good variety of aromatic flavours, including a few that will be familiar to modern chefs for example thyme, rue and dill. Over the following few centuries, the upper-class families of the West strove to serve the most extravagent meals, and as a result the best chefs and their collection of recipes could command a high salary. Nevertheless, it was during the 19th century that formal cookery and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, trying out, and publishing the recipes of their peers. The arrival of TV brings us TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to search through massive numbers of recipes such as those found on our site. |
