The History of Recipes
It is possible to read the history of meal recipes back into history, in truth as far back as ancient Egypt, and maybe even further. In practice though, sadly, these old records were just very basic hieroglyphic instructions for meal preparation.
Later on, in The time of the romans around 25BC a roman called Apicius assembled a few documents showing how to cook the recipes cooked by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, main course and afters, a very modern way of dining. This early Roman chef recounts how the cooks of Roman times were skilled in the use of many aromatic flavours, including a few that are still present in modern kitchens such as bay, rue and parsley. For the decades that followed, the upper-class families of Wesstern Europe strove to offer the most extravagent meals, and because of this the best chefs and their collection of recipes were greatly in demand. Notwithstanding that, it wasn`t until the nineteenth century that cooking and recipe books became popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, spent years to collecting, trying out, and recording recipes for their fellow cooks to enjoy. By the time we get to the 20th century, cookery publications were greatly in demand mostly as a result of higher levels of literacy, people having increased spare time and being a little richer. |
